Fish Processing

For those who don’t like to prepare fish themselves, many of our fishers do the hard work for you and undertake simple processing that means the fish are ready for cooking.

To do this, the fishers need not only a commercial scalefish fishing licence but also a restricted or full fish processing license, so they can prep and sell their catch directly to the public.  Fish processing activities include:

  • scaling
  • gilling
  • gutting
  • filleting
  • freezing
  • chilling
  • packaging
  • any other activity involved in preparing fish for sale.

As part of the Government’s reform process for the industry, we are seeking to simplify the regulations around fish processing and direct sales to the public.
