YELLOW-FIN WHITING IN FRESH SEAWATER

Ingredients
- 8 x Yellow-fin Whiting fillets
- Fresh seawater
- Desiree potatoes
- Spring onions
- Butter
- Black pepper Lemon
Method
- Bring water to simmer
- Add a blob of butter
- Add cracked pepper
- Lower fish fillets in the simmering seawater and cook until flesh becomes white
- Remove using an egg slide making sure it is well drained
- Place on mashed potato
